I have absolutely seen water supplies plumbed with PVC, especially newer installations. This Old House has also done it before, for a slightly easier to reference TV show I am 90% sure.

If you search "PVC pipe for potable water" you get a lot of results about its constant use for this purpose.

You're thinking of CPVC. What the difference is, I am not sure.
