Water is the oldest level tool on earth. because it always finds the level. You can build extremely long canal systems and trust the water to always agree. The water never knows when to change angles.
And the plumb line never gets confused either. If you use a bucket of water and a plumb line you can always find a right angle. scale it up, still works.

Now you are slipping into the tactic of offering truisms instead of argument. Truisms are statements like "two plus two equals four" or "the sky is blue." They are true. No one would argue with them. But they are irrelevant to the point under discussion. You are just waving your hands, since these point do not dispute the spherical Earth.
The level and the plumb line do dispute the ball. Because you cannot scale those truths out to a ball.
Its hard to accept because those are such obvious problems for the globe it doesn't seem like anyone would have ever believed the globe theory.
I noticed you called the stars "fixed". They may appear fixed, but the common theory of outer space would require that nothing out there is "fixed". So with that truth, many more problems with the globe theory arise.
Now you have to start imagining that they do orbit earth and not just... they must orbit earth on an angle that is perfectly consistent with earth's arbitrary axial angle. pretty neat trick.
