I would say this sounds horrible...how sad for you...the anaphylaxis does sound like something foreign that you reacted to...I have never heard of celiacs suffering anything like that. I had an anayphylactic reaction to fire ants...not fun...BTW...keep some homeopathic apis or histaminum on hand...probably 30X or even 200X...learn how to use it...it may come in handy sometime...
Have you ever heard of Muscle Response Testing? That is a way to test whether a substance makes your body strong or weak? I am sure the directions for utilizing this are online and this would be a way for you to test sensitivity to different products. It really works...you just have to learn how to use it...just some suggestions of things that might benefit you going forward...take it or leave it...but good luck with trying to figure out if you can ever eat wheat again...God bless...
Yeah, it's a full-blown wheat allergy, which is something kids generally only get but grow out of. I got it when I was 34. I keep an epi pen on hand, and antihistamines help somewhat for mild reaction, but mostly I'm just really careful. I just can't understand why it hit me in adulthood, out of the blue. Nothing else gives me any reaction. I've pretty much resigned myself to never eating wheat again. Every time I've accidentally had even a crumb I react, everything from brain fog to heart palpitations. I'm mostly fine with it now, except it makes it very hard to eat out, and travelling is a nightmare.
