So the bible tells us "they/them" is a sign of possession by multiple demons.

I see it as they're scared to go full "she" or "he" whichever the opposite to their biological gender is so they pick a "safe" middle ground pronoun of "they/them" which still allows them to feel special and be difficult and draw attention to themselves whenever someone "misgenders" them or something
Another good possibility.
