... why would they tell us? What's more, what is their official rationale for doing this? Are they still trying to make us think that we should fear Covid meat? Just want to start a discussion here.

I don't think there's any realistic way of the mRNA itself surviving all the way from cattle injection to human consumption. If anything it will genetically modify the cow to produce spike proteins which would make their way into meat and milk.
