Sadly, the video did not explain the method of expansion.

Does the Earth acquire more matter somehow?
Is a hole created inside the Earth?
Does the existing mass become less dense?
Something else?

Water is not very compressible. How do you have "super-dense water"?

Also, if the Earth really has doubled in size then its rotation rate will have dropped proportionally.
