Willing to at least try to reduce the amount of fluoride ingested in my local area, as well as setting up more counter-measures in case there are disruptions in water treatment and supply. What are your opinion on those clay and soapstone filters, and the ones that aim to kill germs with UV-light exposure ?

I bought a used Polar Bear water distiller model 26D8 about 16 years ago for 400$. I still use it everyday and its the only water me and my family drinks. I don't trust systems with filters but they are generally better than nothing.
