It's been decades since I last played chess, but I know that only children try to take out all the pawns first. The goal is to checkmate the king, if you can do that in three moves then that's ideal. Only a novice wastes their moves chasing their opponents pieces all over the board.

Correct. There are entire strategies based around reaching the king as soon as possible.
In fact, I don't think I've ever seen a chess player painstakingly hunt down all of the pieces before taking the king, because they'd lose first.
