By being a responsible adult and turning on parental controls to block these sites, limiting screen time, or just outright not providing children with the means to access this content in the first place.
I'm a teacher, and my students talk about Mr. Beast frequently. The only thing I know about him is that his sidekick recently came out as transgender, and there are videos about this person's "journey." Sickening. There are very few famous YouTubers I would let my kids watch. It seems every single one of them has the same agenda: getting famous and doing whatever it takes to get there.

Daily dose of internet (we watch that together)
Those are some we watch. We'll watch the short videos together, sometimes. If it's on, make sure it's loud enough you can monitor everything. If they start watching things not on your approved list, tell them to find something else. Keeps it up? Just turn it off completely.
The first two days I cut back my daughters' screen time they went absolutely nuts. Acting like junkies if the southern border got closed all of a sudden. Makes me wonder how much engineering really goes into kids shows.
Option 1: take away their smart phones and give them flip phones with no internet access or apps instead. Spend time with them and do things with them while you can, if you are only around them when you are driving them to or from school them you won’t be able to have much influence on their lives, their beliefs, or their personalities. Then give them something else to fill the time with when your not around, wether that’s household chores, sports, or other activities.
Option 2: attempt to use parental controls and hope they are not smarter or more tech savvy that you are
Teach them to understand what is being done to them. Once they realize that others are telling them what to think instead of them thinking for themselves, they may (hopefully) become adamant about not allowing it to happen.

Turn off video shorts - just keep down-dooting them after opening the app after a few times and they no longer show

The main ones that our 7 year old likes and is allowed to watch are: Evan Storm Extreme toys tv Tucan Plays Matt's Off-road recovery
We have backyard chickens so he watches a lot of content about chickens.
We homeschool so there is content from The Good and The Beautiful that he views as part of his learning curriculum.

Yeah it's awful content. They are doing better, been enjoying the PNW fall weather outside as much as we can. Its been a battle though for sure
