Like environmentalism in general, veganism is a religion-substitute. They seek righteousness and meaning in their lives, but don't want all the moral restraints (like "thou shalt not commit adultery"). And they don't like introspection.
So they pick on something like fighting "climate change" (instead of "fighting my own evil inclinations") and seek "purity of diet" via veganism (instead of seeking "purity of heart" by growing in virtue).
Gives the illusion of righteousness without all the hard work.
