I don't understand why people don't just do regular backups. You get ransomware, just roll back to before you were infected.

Speaking from inside a Large Company, suits outsource IT to low bidder visa people and fire the people that knew what they were doing. Get shiny reports on how well everything is and how much money they saved. Actual disaster hits and they learn that backups were not done.
