We will never have the complete answer to how to eat healthy because there are too many variables to do actual hard, reproducible science. We can take a heuristic approach using wisdom and discernment to maximize your odds of eating right.
We have had generations of humans who have thrived with various combinations of nutrients. Every civilization has their own set of ingredients they specialise in their cooking. My own approach to food is to try and emulate this wholistic approach by picking one or more of your favourite cuisine and try and cover both summer and winter food, and you will be good to go. Only tweak I would suggest is to cut down on sweets and carbs.
