Hunting leases.
RV/boat/toy storage.
Moonshine.
Crops.
Compost manufacture and sales.
4x4 recreation leasing.
Turn it into farmland and have the government pay you not to grow anything. Sadly, this is a thing. Alternatively, turn it into a tree farm and have the government pay you annually not to cut them down. This is also a thing.
Raise livestock.

Depending on the type of acreage you buy, you can grow hay(ag exemption) raise livestock (ag exemption), conserve wildlife (wildlife exemption). You can also grow vegetables and/or keep bees and receive exemptions for those. IMO - raising hay requires the least amount of work (it’s still work) and you get money for selling they hay. PS, cows are really pricey right now.
