I agree with this assessment. I love using einkorn. It is an ancient flour, never changed and low gluten naturally. And no chemicals.

I think their company sells it through Amazon, frys online but Ive gotten it at natural grocers as well. It's very tasty. Pricy though. Apparently has never been altered so what our ancestors ate. Definitely look into it!
