I stopped having digestive issues when I started milling my own flour and making my own bread. I now make all of my carbs. (bread, crackers, pasta) It's very much a chore but I feel better. Less bloating too. I used hard wheat, einkorn, durum for pasta, einkorn for tortillas.. Etc.
My daughter made the comment this past weekend at my Inlaws complaining how store bread is so sweet. Haha.

The difficult part is going out for eat. I just stick to meat and no buns or rolls etc.
