The very top layer that hardens up is the buttermilk. My Dad likes to tell the story of how the kids in his family in the 1940s would always try and be first in line after the milkman came so they could eat that buttermilk topping.

Thanks. I thought it looked like butter. All I know is my husband loves it and puts a spoon of it in his coffee. AND... he said if u/brain_dead thinks the regular milk is good, he should try the chocolate that they sell too. He said it's to die for.
I didn't know they sold the chocolate milk either until he told me the other day. What he does when I'm not around I may never know, but he says the chocolate also has a bit of the thick cream on top. Just shake it in.
