Well it doesn't taste like chicken... it is a unique taste that I can only say is iguana. Not terrible, a little chewy, but a source of protein in the jungle. Skewer the meat and cook it over a fire, or smoke it. I couldn't tell what kind of wine to pair it with, all we had was water.
