Find a local farmer's market and buy strictly from there. Local ranches who actually range their cows properly will usually sell you a cow and even keep that cow on their land until it's time to slaughter. Cleaned and cut right, a cow can feed a family of four for months and will be the best meat you've ever tasted. Those same local ranches will also sell you chickens and eggs, too.
Yes, local is best.
When I was young, my parents would 1/2 a cow from my cousin and her husband every year. My brother was in the military, so it was just the 3 of us, but that lasted through out the year for us.
Don't forget some bones for the dogs.
