If we didn't eat roadkill in Alaska, there'd be a serious littering problem. Moose can weigh up to 1500 lbs.. We have programs that contact people on a list to harvest moose that have been hit by a car. Even if you can only harvest half of it (due to the damage of being hit), that's a lot of low-fat, organic meat. Don't knock it until you've tried it!

Many years ago I attended a NYS DEC weekend called Becoming an Outdoors Woman. Some of us took a class on field dressing. They used roadkill. I was the only one who wanted to do the possum.
If it's still warm, it's good.
Otherwise forget it.

30 years ago my workmate, a Blackfoot Indian, nails the brakes on the truck while going through the mountains of CO to the job site. He leaps out of the truck...puts his hand on a dead deer on the side of the road, then yells, "It's still warm!!!" and chucks it in the back of the truck.
We roll to the job and he field dresses it right there in the people's back yard..."See, you just cut around the hiney hole, then open this up and viola! It all just falls right out! It then proceeded to snow 3 FEET in 6 hours...My guess is wildlife got it because by the time the snow melted there wasn't a scrap left.

Beef does not hang for weeks , it is aged. All salami is raw pork , dry aged. If you want to eat roadkill go right ahead
