As someone who works in organ transplantation, these stories about black market organ harvesting can’t logically be for transplant. The only reason left is either research (doubtful) or food (cannibalism.) 70% of all transplants are for kidneys, so if everything else is missing the likelihood is black market organ meats.

I knew a guy from AA who couldn't get a liver transplant legally, so he managed to score one on the black market, I forget where he said he had to go to get it done, either Brazil or China, but he justified it and said he didn't care where or who it came from because it was his life on the line, and when your life is in jeopardy you do whatever it takes to survive. His whole point in telling that story was to convince another man who's life was on a timer because of his liver and inability to get a transplant that he should go and do the same thing.
As I was writing that, it struck me, that all the red tape and "waiting lists" that go along with legal organ transplants are a good way to drive normal people to the black market because it creates a life or death situation for them.... Evil marketing.
The term "organ harvesting" began to be used noticeably around 2006 when news emerged that the Chinese Communist Party (CCP) was tissue-typing Falun Gong practitioners in forced-labor camps around China to create a database of living prisoners of conscience (who, through meditation and practice, and abstention from smoking, drinking and other vices, generally had healthy organs).
CCP and PLA backed hospitals advertised on the Internet a state-sponsored program of providing hearts, kidneys, corneas. lungs, etc. within weeks, instead of years (China has no organ donation program). Basically, when an order was placed, that person was ordered killed for the organs.
This was exposed through practitioners, NGOs and government officials, and the hospital websites were taken down, but the program continued - and still does.

I volunteered to host a showing in Colorado, and visited communities to share this information and help expose the atrocities. I met families who experienced this, and the stories are real.
China has helped spread this evil market around the world, including institutionalizing through the communist-led state apparatus the industry of organ harvesting. It is pure evil.

I would just say that so much has been kept from us that I won't dismiss anything at first glance. While legally, yes, it wouldn't work like it normally would for medical establishment organ transplants, doesn't mean there aren't facilities that we are unaware of doing these black market transplants for wealthy people as they have the money to pay privately.
I worked in Massachusetts. I knew someone who worked as Mass General and he was good friends with the transplant surgeons. He told me that the doctors would have patients who would go to Mexico to get organs
One can be too close to see clearly. I know that I was. Even when I thought I was doing due diligence, it never occurred to me that the truth was hidden.
I have suspected the hungry satanists in this the whole time. Nothing else makes sense. And also the aborted babies being sold...

OP is pointing out that organs are not like mechanical parts…even with immunosuppressive, there is quite a bit of tissue typing done between the donor and possible recipients…but if this tissue typing is done…then it’s conceivable an order could be placed…

As a 'bonus father' of kids with PKD (kidney disease) I know how desperate parents can feel around helping their children to health, but I can't imagine being desperate enough to want to buy body parts from a black market in order to try to 'install' them, which would almost certainly lead to a painful death.
Thus I have always wondered (and still do) why there exists such a market.
