I use them for small batch sauerkraut. The ones that I have are plastic with a relief valve in the middle. When the pressure builds to a certain point it will "pop off" too release the pressure and then reseal so as to not let unwanted bacteria or contaminates in. I'm not sure where that model is found as mine was a gift from the person that taught me about the technique.
Those would work too! They look like they have a constant open hole though? I could be wrong. These are the ones I use. Catbox photo image, I can't remember if you are one of the Anons that can't get catbox to open for you. Check amazon for "easy fermenter" and they will come up. The benefit to this style is you can use a hand pump to pull the air/oxygen out of the head space which will prevent undesirable bacteria growth. It is especially helpful for pulling out O2 if you want to open the jar to test/taste the progress of whatever you are fermenting.
