I don't buy it either, but for an upstream reason. There was no calibration of proxy measures. Or at least, the video made no mention of calibrating proxy measures. If you are attempting to estimation population through salt consumption (or toilet flushes, trash removal volume, cellphone accounts, etc.) you have to first establish the relationship in countries for which there is reliable census data. Japan for example, but the more the better. You need to establish error bounds.
Prove accurate estimates for India first. Then they can talk about China.
