I was on a business trip across Asia and Australia back during the Bird Flu outbreak in the early 2000s, and made it a point to find and eat pigeon while in Hong Kong. I didn't get it from a street vendor - I got it at a couple of high-end restaurants in 4 or 5-star hotels (we ate dinners at fine hotels that were trusted). I had fried pigeon, roasted pigeon, and a pigeon noodle soup with a matzo ball. All 3 were outstanding, but none of my co-workers would try it at all. The fried pigeon was probably the equivalent of maybe 3 or 4 Hooter's wings, so I got 2 of them (kek).
Back then I traveled all the time for work and spent a fair amount of time in Asia. When we had to go to China we always went to Hong Kong first, because it was really easy to get another visa if we had to go back to China while on a long trip. Besides - it was a great hub to go to Tokyo, China, Australia, Singapore, Indonesia, and many other places. No idea how it is now that the Brits pissed HK away. I made it a point to try all of the well-known foods from each place, and as many of the "strange foods" as I could. I don't recommend century eggs though.
Don't knock pigeons until you've tried them.

I know about pigeons but I don't trust the Muslims.
