The answer, of course, is because they are trying. Nothing of beauty is allowed to hit the runway or the airwaves. It tells us who is gatekeeping. Even the models within lifetime memory are a stark contrast to the unfortunate people in public today.
It seems to be the outcome of a mentality that has problems with the distinction between "better" and "worse," allergic to the suggestion that there are such categories and not a complete egalitarianism. They fear to be judged, so are averse to performing judgment and therefore abjure standards of quality. (This might be the Randian way of explaining it.)
