They have a wide range of cuisine. One unique thing, not a national dish but I've not seen it elsewhere, is called "chao fan" which is kind of like Italian pasta used in a stir-fry blend of onions and some variety of meat. More varieties of corn and potatoes than here in the 'States. Lots of fish dishes, ceviche etc. If you can find one close to you, it's probably good!
