My computers have multi-layered encryption and I have fake folders with names like "Credit Card Number" that have code written that opens my anti-virus. Password vaults, Wiresharks so I can see network traffic. Every thing I can get my hands on. VPNs. Whitelists and blacklists on browsers. I have an Air gapped computer that I use for long-term storage. I spare no expense on digital security. I only get online to network and get things I can't get IRL.
I have a 'router' set up that switches VPNs every few hours, multiple web browsers for different purposes (no Google Adrenochrome and Firefaux, of course), and storage encryption on all my devices. I pay for these VPN services with cryptocurrency and never use my real address or name.
I just built a Linux firewall server with IP forwarding rules and a script that randomly switches VPNs from a list of OpenVPN profiles. The firewall sits behind my ISP-issued router.

No not at all. All major distros have had GUIs for a very long time as the default. After install which is usually GUI driven, you are presented with a Desktop Manager interface, e.g. the GUI. Most distributions actually give you a choice of what Desktop Manager/Windowing Environment to use. Linux based OSs are not that different from Windows. Btw, Android, Chrome OS, and Apple OS, are all built on a Linux kernel.
You can go as light or deep into Linux as you like.
If all you do is surf the net, there's no real reason to run Windows unless you have hardware that isn't fully supported (2 in 1 laptop with Wacom pen,as an example.)
I switched from Windows to Arch Linux and I'd recommend that move only if you are familiar with command line and Powershell in Windows.
Arch Linux is built from ground up and has the latest packages available. It's a rolling release just like Windows 10 is. However, you have to read and understand the Arch Wiki to install it.
Otherwise, you can go with some flavor of Debian (Ubuntu, Linux Mint or Pop! OS) or Arch variant (Manjaro). These are all OSes with a GUI interface, although you will need to learn command line to do things more efficiently at times.
All intel, AMD, and most cellular phone CPUs since 2013 (2008 for intel) have back doors built in the cores. Look up intel management engine. No amount of encryption can protect from it. I'm convinced that airgapping one of these compromised chips will not protect the data contained on the system either (think 5G, starling, etc). No data is safe. Want a Q proof? "WE HAVE IT ALL"

Yeah. I've always wondered if some liberals play informer and how they do it. I mean their whole MO is complete compliance to the party. They have to have informers somewhere. Not like Alphabet informers per say but more like civilian/social Hitler Youth style informers. That's part of the reason I don't talk to people I used to know were liberal anymore though. I had a lucid dream that there's these civilian informer people who go around and check up on you but are in reality a kind of secret police. They wear really plain clothing. They'll knock on your door and ask you questions or and give you all of this state-approved information, talk about state approved movies and propaganda at social gathering as well as report wrong think to community leaders and stuff. I figured my liberal friends would be the first ones to support something like that so I stopped talking to them. The lucid dream made is seems like they were already among us at the time. this was about... ohhh... 3 or 4 years ago now. It seems more likely every day.
The CIA has plenty of folks just like that in their ranks. Jesse Ventura talked about meeting up with some people like that after being sworn in as Governor of Minnesota.
