To explain:

There are several grades of Olive Oil. "Olive Oil" is not "Virgin" or "Extra Virgin" olive oil. Think of it like this:

First Press of the olives: "Extra Virgin" Second Press: "Virgin" Everything else: "Olive Oil".

The first press and to a lesser extent the second press are "more fragile" when presented with high temperature, than oil from subsequent presses.
