You be transparent with the officer and explain that you need to take your seat belt off to exit the vehicle. You keep one hand visible and slowly disengage your seat belt, but only if the officer said it was ok to do it. It also helps to be non combative with your interactions with police, so if you do need to reach inside you vehicle they don't feel threatened or possible hostility towards them. If you do all that and still get shot then the officer needs to be arrested for murder/attempted murder.

I saw the fella in this video trying to remain calm for the very reasons you explain. Yet many say he was combative or had a bad attitude.
