Sadly more and more businesses will be doing this. It's like the mask mandates and how it's the businesses enforcing it. The government can't force this but private businesses can. We all knew that tech censorship was a slippery slope and here we are.
How is it illegal? They are not discriminating on the basis of a protected class. They are private/progressive businesses and can do what they want (unless they are a conservative baker or florist.) That's why I mentioned tech censorship. People screamed "But the first amendment!" and we were told private businesses can do what they want. So these private businesses are doing what the government can't do (not that anyone in government really cares about the law or the Constitution.)
ETA: It is not a HIPAA violation because it is all voluntary. You have the right to not provide your personal medical information. But if you want to enter the business then you have to make that choice. Is it right? Not in my opinion but it is not illegal at this point in time.
They can ask but it's up to you to decide if you want to provide it. A HIPAA violation is if your doctor or health insurance company give them that info without your permission. Schools have always asked for proof of vaccination history. Why is that allowed? Now even colleges are asking for that. Public schools are basically the government but they have been allowed for decades to ask for vaccination history.
Then it is your choice to not patronize the business. Cancel them on social media if you want! BTW, my sibling died of HIV related illness that she got through a blood transfusion Something other than breathing has to happen to contract HIV.
But theses companies, even though private, are legally classified as a "Public Accommodation." They can't restrict entrance to the public based on some arbitrary "medical status." Their private policies do not supersede Federal law. Therefor, people have the right to be there.
Who is going to challenge them? The face masks were a trial run. These companies saw what they can get away with so this is just the next step. Unless and until someone smacks them, they will continue. My congress critter and both my senators will not do a dang thing about it.

As a private business, I don't think it is. My kid's private school has instituted all parents must be vaccinated by May 1 or remove their kids.
