Ultimately, everyone needs to make their own decision... and then live with the consequences. In her case, she decided she wanted the vax badly enough to sneak out and get it. She now lives with her decision.
Just focus on YOU and YOUR FAMILY now. Hopefully, she will be one of the lucky 75%+ of vaccine recipients that don't have serious issues. I also don't believe that "everyone that had the vax will die in the next covid outbreak". Like most anything, the truth is somewhere in the middle. 100% will not die, nor will 0%. Most likely, roughly 30% of the vaxed will become extremely ill, have serious life-threatening complications and maybe 20% of that 30% will die.
The other 70% of the vaxed may be more susceptible to new waves of Covid, but they'll get by OK.
You did what you could.

Hope the best for your family.
Those are the sort of odds I am expecting too. Maybe a bit higher on the morbidity and death rate.
For some there may be long term fertility issues as well, I believe.
