They should have smashed or swapped out the drives with blanks if they were smart. There are shadow copies of SQL databases for recovery. If they panicked I doubt they deleted them. Forensic software can recover files up to a certain point.

Yes but a lack of data is better than hard evidence for them, so they might still delete everything anyway.
