the DAW shouldn't have a pitch or anything by itself, i think you mean the instrument, ex if you load a synth and you see the 'piano roll', the two wheels you see on the left, correct?
In case it's a ni, it does in fact modulate the pitch, but it's a modulation, so as you say, it goes up and down on how you play, you'll probably sweep by the frequency, but it won't be the same thing
What you would look for, it's a similar option (showing XFR Serum but should be similar in synths that have the option)
In this way you set it (tune it) as the root frequency
Frequency, is the 'length' / 'number of cycles' of vibrations (think x axis)
The pitch i'ts the 'height' of the note (but our perception)
both are correlated and pitch depend upon frequency (keep in mind that low freq are the first one played, hence a shorter freq will make the note short and will sound low, while with a high freq, the note will be longer and will sound higher)
Serum indeed is one of the best, specially in ease of use/GUI, other good alternatives i'd suggest trying if you didn't are also Vital (free), U-He generally (but specially Zebra / Hive / Diva), Arturia (Prophet V is just amazing)
