Work for one of the “big three”, or what used to be. There is a mandate for salaried workers to report Yes No on getting the poke.
Their FAQ site said vaccines are not considered HIPPA therefore we need to document. My thought is to wait till the last week then write a letter saying the “COVID Vaccines” are not in fact vaccines and are therefore by law I cannot report my medical status nor can they ask.

Is this the time to hold back or do I simply say No and Waite and see if we are treated differently and start a lawsuit. Or if the require get them on directing medical treatment?

My company, with about 16K employees just came out stating there would be an "anonymous" survey on who got experimented on. They also pushed back coming back to the office 60% of the time due to the increase in whatever made up variant we are on now. I think I'm going with "not getting it due to health reasons" and those reasons are HIPAA so they can't ask, the quiet part being that I'm healthier without it.
Is still astonishes me, just how many people are still sleeping.

Just because they say it's not hippa protected doesn't mean it's not hippa protected. It's your personal health history, thusly, your personal business. Fight them tooth and nail, fren. They have no right whatsoever to expect you to do something that is against your person liberty and if they insist they do, than they are the 'selfish' ones. Good luck, whatever you decide to do. well, it is HIPAA. My company does it too; I ignore it.
