Just stop using your phone for work and force them to give you whatever phone it is they would prefer you have. With everything as it is I think it's wise to keep your work life and your personal life as far away from each other as you can. But I'm just some asshole on the internet. You do you.
I guess I should have prefaced this with saying that using my phone for work is completely voluntary. I’m fortunate enough to work from home and if I’m all caught up on my work, I can go do other things and walk away from my computer. By having my email on my phone, it gives me the freedom to walk away from my computer for a while but still not miss something important.
The update fixes a no-click remote exploit that allows anyone with money to install Israeli spyware on your phone and access virtually everything on it. The update is needed - I installed it.
In the same situation as you, WFH, personal device access allows me to be anywhere. I'm a security expert, former CISO, and keep up to date on all things InfoSec. I'd install the update and move on with my day.
