We cannot measure the Earth's curvature. We know what the curvature should be (8 inches per mile^2) So at 2 miles away, there should be a 32inch drop.
10 miles, 67 feet.
20 miles, over 250 feet of drop.
If the earth has this curvature, then this is exactly what we'd measure at distance. Yet... we don't measure any drop over distance. Why is that?
The earth obviously isn’t unmoving, pendulums prove that, you can build your own it’s pretty simple. (So long as I understand what you mean) Why haven’t you tested and proved that there isn’t a drop?
I’ll allow the Smithsonian to explain the very basic relationship between a hung fixed point objects inertia and it’s behavior in relation to the rotating earth. This is pretty simple stuff that you can test for yourself.

This necessitates nearly 40 feet of drop, which should completely hide the ship and the coastline.

The Foucault pendulum, oh boy. Why would any pendulum be stationary on earth, if this pendulum gains momentum from earth's rotation? Why would this pendulum ever rotate in the opposite direction? Why wouldn't this pendulum be affected by all of earth's motion, rather than just it's axial rotation?
There's a reason you don't hear a lot of scientists worth listening to quoting this pendulum. It proves nothing. It's a show, for fools.
