That's not a hologram, it's augmented reality. The people couldn't actually see that, they had to watch it on their phones.
Here is another one. No glasses or phones being used. There are many more videos and noone is using anything except their eyeballs to view. The kids are actually trying to reach out and touch the objects/animals. Look up project bluebeam.

Neither of those videos you posted are real holograms.
The Dragon is from an augmented reality demo in South Korea that people could only see using their phones, not the naked eye: https://www.snopes.com/fact-check/dragon-over-baseball-stadium/
The whale is CGI creation to promote the startup augmented reality company called Magic Leap. This tech is also only viewable using the companies AR glasses. https://www.theregister.com/AMP/2016/12/09/magic_leap_neither_magic_nor_leaping/
I can debonk as many videos as you want, the tech doesn't exist yet to make this sort of thing visible to the naked eye, and I've worked in visual effects before. This is somewhat my passion, so trust me I would know if this tech existed.
In 2001 video capability on phones was almost non existent and years away from being commonplace.
*and if a phone had the capability it was very short recording time and looked like it was filmed through a diaper.
