So fun fact, turmeric actually helps with inflammation by causing inflammation (hormetic stress) (headaches in your case). It would appear you are one of the people who this doesnt work well for.
It sounds like you might be a poor metabolic/digestive fit for the herb. You can also modulate inflammation by fasting, cold showers, exercise, avoiding preservatives/processed food/drugs, low carb eating, etc. I'm a dietician and I think turmeric isnt the panacea of health its touted to be. I do think for many people it can toughen their inflammation response, but we can do that many ways.
EDIT: A lot of turmeric is poorly sourced and has heavy metals in it too.
