In the 1950's, Americans were suddenly dying of heart attacks like never before. Eisenhower had 2 heart attacks while president, and later died of a heart attack.
People wanted to know ... WTF?
So, Ancel Keys came onto the 3 networks (ABC, CBS, NBC -- all in New York City, so it was easy to go from one studio to the next, and be on every TV in the country). He told the public about his famous "7 Countries Study" (sometimes called the 6 Countries Study because England and Wales were separate data points, but both part of the UK).
It was called the "Diet-Heart Hypothesis."
He said these countries proved that as a society eats more saturated fat, there is more heart disease. And these 7 data points did show that. But ...
... he LIED.
He did not study 7 countries. He studied 22 countries, and cherry picked the 7 to "prove" his point.
The fake news media, with Rockefeller money, pushed this fake study. He was called out on it, and other researchers called him a fraud, but the public only heard one side of the argument.
That's when fake butter, fake oil, fake everything came in.
In the 1970's, Senator McGovern lead a panel to determine what the best diet is for Americans (not that they have any business in this area, per the Constitution). All the experts they brought on said Ancel Keys was WRONG. They said fat is NOT a problem. But McGovern was paid off by Big Agriculture, and that's when they came out with the bogus Food Pyramid.
Since then, they have been demonizing saturated fat because it is profitable to Big Agriculture.
But there has NEVER been a study showing dietary saturated fat and ANY illness. And there never will be. It is very important to eat saturated fat (sorry vegans, your diet is wrong).
BTW, the reason that Americans were getting more heart attacks in the 1950's was due to smoking. Smokers have a 5 times higher rate of heart attacks. Eisenhower smoked 4 packs a day.
In the 1920's, it was Edward Bernays, the American propgandist, who was hired by the tobacco companies to come up with an advertising campaign to get women to start smoking. Make it look glamorous. Soon, women started smoking -- a lot.
It takes about 20-30 years for smoking to take its toll, and by the 1950's, the toll we being paid. TV shows (a new thing in the homes) was sponsered by cigarette companies like Big Pharma is pushed today.

As an aside, Edward Bernays was the nephew of Sigmund Freud. Freud worked on psychology of the individual, whereas Bernays worked on the psychology of the masses (how to manipulate the minds of the masses). He came up with the slogan, "Make the world safe for democracy." That was to manipulate Americans into supporting entry into WW1. They have been using the same slogan ever since to continually beat the war drums.
There was an Oxford professor who did work on all the fat groups, mono poly etc.
He had difficulty explaining scientifically how all of this narrative fitted when you had Inuit living off of seal blubber and polynesians having a diet high in coconut oil and fish oil.
I think that the fewer ingredients in a product the easier it is for the body to process.
