This is interesting. You could make the argument that you were completely uninformed that this was strictly voluntary, you had not been informed of the risks, or that you were assuming all risks to yourself.
What's to stop you from suing their butts off? They have no proof, as you didn't sign anything.
OTOH, what is your proof you've been vaccinated?
You are given a card with the name and lot number of the vaxx you received, along with the initials of the person who administered the jab.
It was a requirement, however, that you would be fully informed of the risks to yourself before you received the shot. It seems to me they would be liable for failure to inform.
(I'm not a lawyer, but it only makes sense.)
