I believe they did. How else would Ankor Wat in Cambodia have bas-relief sculptures if humans riding dinosaurs like Ankylosaurus, Triceratops, etc?

I searched but only came up with one relief that depicts what could be interpreted as a stegosaurus but none showing them riding any dinosaurs.
There are a bunch of them riding elephants though which is pretty cool.
