I hear you. I am super stuck up now when it comes to my meat.
I can feel the difference in the farm. Crap meat hurts my stomach and makes me tired. It has to be real good meat.
SO random story. Back in the 1980s Japan and Texas somehow got super cool and Japan did something it had never done to honor Texas - they gave us 30 head of Kobe Cattle.
Texas, being Texas, assigned a ranch and secured it with Texas Rangers who continued to breed the Kobe until they bred a new steer called Akaushi.

Long story short I can get this stuff direct-from-ranch for about $6/lb for 80/20 ground beef. It's amazingly good. Basically Kobe.

Oh man…you’re sitting pretty. Agree 100% I got sick of beef after several bad gastro experiences not to mention reading about the industry, hence my avoidance. I found elk, venison & bison more to my liking actually as far as red meat goes. I’m going to look into your link and can’t thank you enough as I do miss good beef!! 💕👍🏽

I love me pretty much any dark meat, too, don't get me wrong.
I even finally found a way to make wild hog that I don't hate ( Boar Tamales lol ).
Bison is prob the best for me enjoyment wise. I do love a good Elk Steak and make some mean Chicken Fried Venison. I make mine using Pork Rinds as the breading with Heavy Whipping Cream / Eggs as the binder. I fry it in Coconut oil and Bacon fat.
