Just going to walk in to work and refuse outright to wear a mask. I have a voice recorder that I plan on bringing with as well. I'm going to start doing my job without a mask, refuse to wear one, and tell them to give me a written letter of termination otherwise.

Yep, this I know. I also know that I have to legally state my intention to record the conversation and get consent to do so.

It depends what state you are in.
If your state is a "one party consent" state you do not need to get their consent to record the conversation (you are the one party that has already consented to the recording).

You are not on the phone. Undercover surveillance doesn't require an announcement that you are doing it or that you require anyone's permission to do so. Don't blow your cover.
