Its worse than that. Not only do they bleach the flour, but they also leave it sitting in the heat to rot for a long time.
"Whole grain" benefits only really applies to home milled flour. Most of the stuff you buy at the store is whole grain flavored. My bread molds within 4-7 days depending on temperature, not that it lasts that long. If even mold hates your bread you probably shouldn't be eating it. You should be eating little that is shelf stable.
