I'm a relative caveman myself when it comes to mobile. Don't have the inclination + time to learn it up to the standards I would set myself if I did dig in too much....

It's cumulative knowledge and hours of fiddling around. Find a good firewall you are comfortable with, play around in settings and decide what you're comfortable with giving up. Some people simply cannot function without the stock google apps, or twitter etc.
