It may be much harder to get away from Google/Alphabet than you think. Most browsers are based on Chromium open source code.

Maybe your thinking Brave browser, yup Brave is Chromium based. Microsoft Edge is Chromium based. Mozilla is Gecko-based. Mozilla name was formed from Mosaic Killer. Mosaic based browsers were IBM Webexplorer, and Internet explorer 1.x

Also, Chromium is open source. Chrome is not. You can see what it does.
