Actually, it's quite possible he could hit a 5 iron from 181, especially if he's hitting clubs with senior/flex shafts. Despite his age, he appears to still swing with good power. Even if he's into the wind, play a low stinger.
I'd normally hit a 6 iron from 181, but would need to know more details re: wind, elevation, humidity (denser air, ball won't travel), if there's forced carry over water, pin location (front/back), bounce potential into the green, if there's a ridge/backstop behind the pin etc... given this was in Florida, I probably would be hitting 5 to be safe due to sea level and humidity with less dense air.
