It's my understanding that most cell phone tracking is done via the WIFI, Cellular Signal (4G, LTE, 5G, etc.), Bluetooth, NFC, and maybe a few more subtle connection types.
Airplane mode turns off your cellular signal and WIFI, but not things like Bluetooth. For instance, you can still connect to your Bluetooth headphones while in Airplane Mode. If you turn your phone off, and especially if you can remove the battery, you should be relatively safe and secure for traveling.
The safest thing is to not bring your phone with you if you need true security. This would include smart devices like smart watches and fitness trackers, etc.
Perhaps the greater challenge is that there are a tremendous number of security cameras all over the place. Both public and private companies use these all over and they are often connected by WIFI which means they can be "evesdropped" on
and/or recorded. Traffic cameras are becoming ubiquitous in most major cities, so anywhere you drive in a vehicle is also being recorded at all times.
Traffic cams record your vehicle, and facial recognition software can track you, so even if you shut your phone off, it doesn't mean you aren't being tracked.
Our world is much more dystopian than most people realize.
💯% Correct. The older the car the better. Not only do our vehicles now tell us what to do, "stay in the lane!", "slow down!", "you're going to crash!" They are already moving past that and self driving now. Kids born today will likely never drive a car.

Your car itself could be an issue. Bluetooth, onstar, etc
