Somewhat related is the issue of stevia. Stevia is turning up in everything these days, and it is touted as natural. It is from a plant related to the ragweed plant, which is a YUGE allergen to which many people have a bad reaction. So be careful, frens.
And OP, I hear your frustration and I'm sorry you have to deal with this. I think this is one of those 'unintended consequences' that happen when politicians start regulating things without considering the real world implications. The cost to companies to explicitly follow the regulations is probably prohibitive. The letter actually seemed quite respectful to me. I think the man sympathizes with people with the allergy, but sees no other way to deal with the consequences of the regulation.
In the old days mom and dad packed lunches for school. We use to show off our trendy Roy Rogers and Lone Ranger lunch buckets to each other. We were eating home gardened 'organics' before it was ever called 'organic' food.
We try to reenact that today. We cook up organic chicken and make organic sloppy Joes. I'll take a whole fryer and add onions, bell peppers, Mexican peppers and jalapenos to make chicken burritos. In place of bread sometimes I'll use artisan lettuce to hold the meat, cheese, and shaved veggies. I got the idea from watching the "Lord of the Rings".
I guess if anyone wants to play it safe, it's best to take control and try not to depend on strangers for providing food products.
In order to include sesame as an ingredient on a package label, the FDA requires that the ingredient be present which is why we will be adding trace amounts of sesame flour in all of our bread and bun dough recipes to comply. The end result will be that we will have both wheat and sesame as common allergens in all of our products eliminating the requirement for allergen cleaning. We will not begin the addition of the sesame flour until all of our packaging is updated to include the warning.

Yes, there are allergen free breads. Thing is these companies are not letting the public know they're adding the allergens.
Kind of on the same note, will they begin adding traces of the vaxx to foods w/out informing the public?
This makes me think about the meat sausage industry.... I don't even want to think about it.
