I have a lot of food intolerances too. I've thought that jusssst maybe, all of these food processing facilities being destroyed are a way to get the crap out of our food. Good for you for canning. The FDA is not our friend.
Well, it's either can or starve. You can't even buy a can of plain tomato sauce without there being onions or garlic in it.
I went to a friend's place once for dinner and had (cooked, lol) frozen peas. I got sick as a dog after eating the meal and couldn't figure out why, as everything was Wulf-approved. I went home and started searching online and discovered they put sulfites in frozen veggies. Who knew? Canned or frozen corn is a problem for the same reason. Corn turns a brownish color without preservatives. They do it for potatoes too, like the potato flakes for making mashed potatoes or frozen french fries. High fructose corn syrup has it, as well, and it's in everything! If someone wants to burn down the high-fructose corn syrup factory, then I'll be right there with the matches, lol! Was the worst decision anyone ever made. Fun fact - high-fructose corn syrup was a by-product and once considered useless. They used to feed it to pigs just to get rid of it until some DS "genius" decided they could make money off of it by adding it to foods.
