I have seen great memes saying "you wanted choice for abortion but you wouldn't give me a choice regarding the vax.". So, now that the situation is reversed, and we can't say that anymore, what are some replies when they figure that out and use it against us?

Yes, that's clear. All we can do is speak the truth though; they'll eventually start hearing it or not. People can only hear what they're ready to hear.
